Caviar Benoît is the ultimate expression of gastronomic excellence: an Imperial Osetra Caviar that embodies authentic distinction and tradition, obtained from sturgeons that are up to 60 years old and over two metres long.
Caviar is extracted using the milking technique, an innovative and respectful process that allows the precious pearls to be collected without harming the sturgeon, guaranteeing its well-being and contributing to the sustainability of the species. This method preserves the exceptional quality of the delicate eggs, measuring between 2.5 and 3 mm, which offer a firm and creamy texture, with a refined flavour that combines a subtle hint of nuttiness and a hint of iodine.
Its colour, which varies from dark amber to translucent gold, reflects its exclusivity, as Imperial Osetra represents less than 1% of the world's production.
